You’re trying to get the kids out the door, pack their lunches, catch the bus, pick them up from soccer practice and all their other activities. You look down at your watch, and it’s 5 o’clock. And you haven’t planned dinner yet. Where did the time go!?

Have no fear! Chef Uno from Red Stix Asian Street Food has the perfect recipe for the back-to-school madness that will have you skipping the drive-thru and takeout queue.

This no fail fried rice recipe will quickly become your go-to favorite. Uno’s timesaving tips include ready made rice (like those microwavable packets at the grocery) and cooked rotisserie chicken, all of which you can grab on your way out the door.

Chef Uno’s Fried Rice On-The-Go

INGREDIENTS

  • 3 cups cooked rice * (can use pre-cooked rice to save time)
  • 2 Tablespoons vegetable oil
  • 2 cups diced chicken breast (can be substituted with shredded rotisserie chicken)
  • 1 Tablespoons chopped garlic
  • 1 Tablespoons zested ginger
  • 1 small white onion, chopped
  • 1 cup frozen peas and carrots, thawed
  • 2-3 Tablespoons soy sauce
  • Salt and pepper to taste
  • 2 eggs, lightly beaten
  • 2 Tablespoons sliced green onions and cliantro

 

INSTRUCTIONS

  1. Preheat a skillet or wok to medium heat. Pour oil in the bottom. Add the chicken and saute until cooked through, 4-5 minutes.
  2. Add white onion, garlic, ginger, peas and carrots and fry until tender and aromatic.
  3. Slide the chicken mixture to one side and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the cooked chicken.
  4. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Top with salt, pepper and garnish with sliced green onions and cilantro.
