The concept of “poké” started from the simple cut offs of fishermen’s catches, served as snacks, and has since evolved into today’s healthy raw fish salad that we know and love as the poke bowl. Chef Joon Choe’s connections to local farmers and fisheries are the key to his creations and their exceedingly fresh ingredients. Trust us, you’ll taste the quality in each bite. Meet Chef Joon Choe

A Culinary Institute of America alumnus, Chef Joon Choe is no stranger to the type of technique needed to create exceptional dishes. After two months of research in Japan and an apprenticeship with the Jean Georges Restaurant in New York, he decided to focus on the more delicate and pure side of seafood. Taking everything he had learned about rice and fish from Japan, he was ready to open in just four months! This was the beginning of FreshFin, now at Legacy Hall.
